Method
  • Season chicken.
  • Combine canola oil and juice and grated peel of 4 limes. 
  • Pour over chicken.
  • Blitz garlic powder, chopped thyme, chopped parsley, brown sugar, paprika, allspice, chilli flakes, ground nutmeg and a pinch of cinnamon in a food processor until well combined. 
  • Add chopped garlic cloves, spring onions and habanero chilli and roughly process.
  • Remove chicken from marinade and coat with spice mix.
  • Place chicken breast side down and cook over medium coals for 25–30 minutes or until cooked through, turning frequently.
  • Baste with remaining marinade and serve scattered with fresh coriander.
