KNORR: Everyone's Favourite Country Beef Stew

This comforting dish is packed full of veggies ‐ a classic winter midweek meal!

Method
  • Put brinjal in a colander, sprinkle generously with salt and leave for 20 minutes. Rinse and pat dry.
  • In a large pot, heat oil and fry onions and garlic until soft. Remove and set aside.
  • Add brinjal to the pot and fry for 5 minutes. Remove and set aside.
  • Fry steak with Robertsons Paprika until brown.
  • Add tomatoes, tomato paste, onions, garlic, brinjal and water, and bring to the boil. Simmer covered for 30 minutes.
  • Add potatoes, celery, carrots and bay leaves, and simmer for a further 55 minutes.
  • Mix the KNORR Chakalaka Soup with a little water to form a smooth paste and stir into the stew. Simmer for 5 minutes and allow to thicken.
  • Remove bay leaves and garnish with fresh parsley.
  • Serve with rice.
