Method

  • Preheat oven to 200ºC.
  • Mix garlic, oil and vinegar together. Season and toss through kumatoes.
  • Marinate kumatoes for at least 30 minutes.
  • Mix feta and ricotta together. Add the one egg and seasoning and mix well.
  • Unroll pastry and give it a quick roll. Trim to create a neat rectangle. Score the edge to form a border; then brush with beaten egg.
  • Place pastry on a disc on an oiled/lined baking sheet.
  • Spread over cheese mixture.
  • Bake for 20 minutes until crust is golden and puffed.
  • Remove from oven and pile on marinated tomatoes. 
  • Top with onion sprouts and wild rocket.
