Method

Marinade:

  • Mix marinade ingredients together in a large bowl and add meat. Toss to coat and marinate for at least 3 hours.

 Biryani:

  • Heat a large glug of oil in a saucepan and fry rice for 5 minutes.
  • Add half a cup of water.
  • Cover and simmer for 5 minutes. Remove from heat and set aside.
  • Heat another glug of oil in a large saucepan and fry potatoes until golden. Set aside.
  • Add more oil and fry onions until well browned and beginning to crisp. Remove and set aside.
  • Add meat and marinade to saucepan and cook, covered, for 30 minutes. Remove and set aside.
  • Layer half the potatoes, onions, lentils and rice in saucepan.
  • Cover with meat and layer with remaining potatoes, onions, lentils and rice.
  • Sprinkle with 1 cup of water.
  • Cover and simmer on a low heat for 45 - 60 minutes. Add more water if necessary.
  • Serve topped with boiled eggs and coriander (with atchars and sambals if you like).
