Method
  • Grind thyme, oil and seasoning with a mortar and pestle.
  • Rub mixture over lamb and mushrooms.
  • Heat a heavy-based saucepan or griddle pan.
  • Cook chops for 3-4 minutes on each side, depending on their thickness. 
  • Add mushrooms and fry until cooked through.
  • Blitz pesto ingredients until well combined and roughly chopped. 
  • Serve chops with pesto sauce and mushrooms. 


Great idea

  • Freeze spoonfuls of pesto in an ice tray and defrost as needed.
