Method
  • Season meat and toss in flour until lightly coated.
  • Heat a glug of oil in an ovenproof casserole dish and brown meat. 
  • Remove meat and set aside.
  • Drain excess oil from pan and sweat off onion and garlic.
  • Return meat to pan and add lemon peel, juice, and stock.
  • Cover and gently simmer for 1½ - 2 hours. 
  • Add more liquid if necessary.
  • Add potatoes and simmer for 45 minutes longer.
  • Toss in green beans and simmer until tender.
  • Adjust seasoning.
  • Blitz drizzle ingredients together and check acidity.
  • Add a little more sugar if necessary.
  • Serve bredie over white rice, lightly drizzled with mint sauce.
