Method
  • Heat oil in ovenproof saucepan and fry whole spices for a minute
  • Add onion and fry until golden. Add lamb and fry until well browned.
  • Blitz garlic and ginger with a little water to form a fine paste
  • Add garlic and ginger paste to lamb mixture, mix, reduce heat and continue to cook for 3-4 minutes, stirring regularly.
  • Add ground spices, curry paste, tomato pulp and yoghurt. Cover and simmer over a low heat for 15 minutes, or until sauce has almost completely reduced.
  • Add enough boiling water to cover lamb, bring mixture to the boil, then reduce heat and simmer for 35-45 minutes, or until lamb is tender.
  • Scatter over coriander and serve with steamed rice
