You can use chicken livers for this dish if you prefer.

Method
  • Toss sliced liver in a little olive oil and season well.
  • Flash-fry liver in batches over a high heat to brown then remove from pan and set aside.
  • Liver should still be pink in the middle.
  • Add a little more oil to pan and fry onion until soft, then add garlic and fry for another minute.
  • Deglaze pan with balsamic vinegar and add liver.
  • Cook to reduce vinegar slightly.
  • Mix liver with beans, arrange on a serving dish, scatter over rocket, parmesan and serve immediately.
