Method

Sponge

  • Preheat the oven to 180°C
  • Grease and line a square 18cm cake tin
  • Cream the butter and sugar until double in volume
  • Sieve in the flour and cornflour and gradually add hot water and butter
  • Mix to form a smooth batter
  • Pour mixture into cake tin and bake for 30 minutes
  • Remove cake from tin and allow to cool
  • Refrigerate sponge for at least 2 hours before slicing into 16 squares


Icing

  • Combine the icing sugar and cocoa in a bowl
  • Heat the milk in a pan, add the butter and melt
  • Add milk to the sugar/cocoa mix and stir until smooth
  • Using a fork, dip the sponge squares into icing, then roll in coconut to cover
  • Place on a cooling rack to set
  • Lamingtons are best when left to ‘mature’ for a couple of hours before eating. If you can restrain yourself, store them in an airtight container.
