Method
  • Preheat oven to 200°C
  • Toss butternut with oil. Season and roast for 25 minutes or until cooked and golden.
  • Heat a glug of oil in a saucepan and sauté leeks until soft
  • Add rice and cook, stirring, for a minute
  • Add wine and cook until liquid is absorbed
  • Add stock, bit by bit, stirring constantly, until just cooked and creamy.
  • Fold through butternut and parmesan
  • Season well and serve immediately
