A healthy, low fat dish. Cooking time may vary depending on the size of your fillet, so if you're wary of your pork being a little pink, cook it for a further 10-15 minutes. Use beef instead of pork if you prefer.

Method
  • Preheat oven to 200°C.
  • Rub pork with garlic, lemon zest and juice and olive oil. Marinate for 1 hour or overnight.
  • Heat a griddle pan and sear pork until browned. Place on a roasting tray to cool slightly.
  • Tie pork with string.
  • Tuck thyme sprigs and bay leaves between pork and string.
  • Layer sweet potato, butternut, celery and onion in 4 individual ovenproof dishes.
  • Pour over stock. Place vegetable bakes on roasting tray and cook for 30 minutes.Place pork in oven and cook for a further 20-30 minutes or until meat and vegetables are cooked through.
  • Season and serve warm.
