Method
  • Use your fingers or the back of a spoon to loosen skin on chicken breast and thighs.
  • Place a few slices of chorizo under the skin over breast and thigh meat. Pull skin tightly and secure with a toothpick to prevent it shrinking during cooking.
  • Toss potatoes, garlic, thyme, onion and lemon on a roasting tray with remaining chorizo.
  • Mix saffron ans sherry and poua over potato mixture.
  • Place chicken on potato, drizzle with oil and season.
  • Cover with foil, sealing well around roasting tray.
  • Roast for 45-60 minutes, then remove foil and roast for 30 minutes or until chicken is golden, crispy and cooked through. Rest chicken.
  • Place a small bowl upside down in the centre of a platter. Arrange potatoes around it and balance chicken on top to create a 'Dali-esque' levitating chicken.
