A nice dessert for any occassion.

Method
  • Lightly grease a 22cm loose-bottomed fluted tart tin
  • In a large bowl, beat the butter and sugar together
  • Add the beaten egg yolk and whisk the mixture until light and fluffy
  • Sift all the dry ingredients together and add to the butter mixture to form a soft dough
  • Press the pastry into the greased tart tin
  • Roll the rolling pin over the tin to neaten the edges and trim off the excess pastry
  • Fit a piece of baking paper into the tart case and fill with baking beans. Chill for 30 minutes.
  • In the meantime, pre-heat the oven to 180ºC
  • Remove the tart case from the fridge and bake blind for 10-15 minutes until golden brown.
  • Remove and allow to cool completely.


Lemon filling:

  • Whisk all the ingredients in a bowl and allow to stand for 5 minutes.
  • Pour the lemon filling into the pastry case and bake in a moderate oven at 180°C for 20-30 minutes or until the filling has set slightly.
  • Remove from the oven and allow to cool.
  • Refrigerate until cold.
  • Serve dusted with sifted icing sugar or top with meringue.
