Method
  • Place lentils in a pot, add stock and bring to the boil
  • Reduce heat, cover and simmer for 20-25 minutes until cooked through. Drain and set aside.
  • Toss lentils together with all other salad ingredients. Mix dressing and drizzle over salad.

  • Use shredded chicken or tuna in place of salmon
