Method
  • Heat oil and fry onion until soft.
  • Add celery, garlic and carrots and fry for a minute or two.
  • Stir in lentils and toss to coat.
  • Add remaining ingredients (except parsley) and bring to the boil.
  • Cover and simmer for about an hour.
  • Adjust seasoning to taste, stir in parsley and serve as desired.
     

Ways to use it:

  • On pasta
  • On brown rice to create a complete protein
  • In pita breads, tacos or wraps
  • Spoon into a baking dish, top with mash and serve as veggie cottage pie
