Method
  • Heat a glug of oil and fry onion until soft. Add paste and spices and cook for a minute.
  • Add lentils and toss to coat in oil and spices
  • Pour over 3 cups of stock and simmer until lentils are cooked. Add more stock if needed.
  • Brush brinjals with a little oil, sprinkle with curry powder, and season
  • Chargrill brinjals until cooked through
  • Heat rotis according to packet instructions
  • Ladle dhal over brinjals, drizzle with yoghurt and serve with coriander and rotis


More good ideas

  • Dice brinjal and add to dhal if you prefer
  • Serve with PnP tomato sambal
