Method
  • Preheat oven to 180°C.
  • Grease enough muffin trays to make the amount you require.
  • Beat eggs, sugar and oil until pale yellow. Stir through milk.
  • Sift flour and baking powder together.
  • Stir through remaining ingredients and two thirds of seeds. Stir through egg mixture until just combined. Be careful not to over-mix.
  • Fill each muffin cup three quarters of the way to the top with mixture.
  • Bake for about 20 minutes or until cooked through and crispy on top.
  • Serve muffins in muffin cups with assorted fresh fruit of your choice if you like.
