Low GI microwave mealie bread

Rich in fibre and low in fat this mealie bread is simple to make. Taken from the low GI, low fat recipe book by Gabi Steenkamp, Tanzia Merlin and Jeske Wellmann, Sustained Energy for Kids (Tafelberg).

Method
  • Spray a microwave ring baking pan with non-stick spray or grease with paper towel dipped in oil.
  • Sprinkle a little paprika into oiled ring pan.
  • Mix all the dry ingredients together in a medium sized mixing bowl.
  • In a seperate bowl or shaker, mix the oil, eggs and milk together well and add to dry ingredients.
  • Add the sweetcorn and mix well.
  • Spoon into the microwave baking pan and microwave at 70% power for 12 minutes, then at 100% power for 2 minutes.
  • Allow 10 minutes for standing time.
  • Turn out, slice and enjoy!
