A healthy alternative to greasy pizza! Taken from the low GI, low fat recipe book by Gabi Steenkamp and Liesbet Delport, Eating for Sustained Energy 2 (Tafelberg).

Method
  • Preheat the grill
  • Lightly toast the bread
  • Spread tomato paste on the bread
  • Arrange the sliced mushrooms on the bread
  • In a medium sized bowl, mix the breadcrumbs and herbs and cheese and spread evenly onto the four slices of bread.
  • Place the "pizzas" in an ovenproof dish, sprayed with non-stick spray.
  • Grill for 3 minutes directly under the grill, until the cheese bubbles.
  • For extra zest, add a little chutney or chillies.
