A healthy and tasty way to cook pork fillet and something a little different. Taken from the low GI, low fat recipe book by Gabi Steenkamp and Liesbet Delport, Eating for Sustained Energy 1 (Tafelberg).

Method
  • Fry the bacon and the onion until the onion is transparent and the bacon is crisp.
  • Mix a third of the soup powder, pepper and salt and roll the pork pieces in the mixture. Add the pork pieces and beans to the onion and bacon. Heat and mix well.
  • Mix the rest of the mushroom soup powder with the white wine and water and pour the mixture over the beans and pork. Add the mushrooms. Turn the heat down and simmer for 40 minutes until the pork is done.
  • Serve on half a cup of pasta or Basmati rice with vegetables.
