Method
  • Preheat oven to 180C
  • Cook pasta according to the packet instructions
  • Drain and set aside
  • Melt butter in a large saucepan. Add flour and stir to form a smooth paste.
  • Gradually add milk, stirring well between each addition, to form a smooth sauce
  • Season and add nutmeg
  • Stir in half of both cheeses
  • Toss drained pasta into cheese sauce and mix well
  • Check seasoning and spoon into an ovenproof dish
  • Scatter with remaining cheese and bake for 20-25 minutes or until the cheese is melted and golden.

 

Cook's tips

  • To make cauliflower gratin, pour cheese sauce over steamed cauliflower and grill.
  • Add diced cooked bacon or chorizo sausage to macaroni before baking.
