Method
  • Flake fish, removing any bones, and place in a food processor. Toss in sour cream, cream cheese, horseradish and half the butter.
  • Blitz until completely smooth.
  • Taste and flavour with lemon juice, salt (to taste) and pepper.
  • Divide mixture between ramekins. Melt remaining butter.
  • Top pate with a herb sprig and spoon over butter. Set. Toss herbs and gherkins with a little lemon juice and olive oil and season.
  • Serve pate with a small pile of herb salad and toasts.
