Method
  • Sauté onion in a glug of oil until soft.
  • Boil or steam madumbis until soft. 
  • Mash while warm with ghee.
  • Mash chickpeas and lentils.
  • Add madumbis and remaining ingredients (except egg). 
  • Mix well and season with salt.
  • Add egg to bind. Form into balls or flat patties.
  • Heat 4cm oil in a hot nonstick pan and fry balls for a few minutes until brown all over. 
  • The balls will start to foam, which is normal.
  • Be gentle with them.
  • Place balls on kitchen towel to absorb excess oil.
  • Serve hot with a chilli sauce and minted natural yoghurt.
