Mara Louw's favourite dish - it is quite delicious. Reduce the fat content by using low fat coconut milk.

Method
  • Heat the oil in a large pan, add the chopped onion and sauté it for a few minutes until it is just soft
  • Add the garlic, chilli, ginger and curry paste, and fry them together for 1 minute until they become aromatic
  • Stir in tomatoes and coconut milk, and simmer for 15-20 minutes
  • Add seafood, cover and simmer until seafood is cooked (about 8 minutes). You will need to gently stir the mixture from time to time.
  • Spoon into a serving dish, top with fresh coriander and serve with rice
