Masala fish wIth butternut soufflé topping

All you need for a perfectly balanced healthy meal is a green salad and some fresh bread.

Method
  • Preheat oven to 200ºC
  • Mix the first five ingredients into a paste
  • Cut fish into portions  and spread  paste  on both sides 
  • Place  in a medium-sized, greased  ovenproof dish
  • Bake for 10 minutes


Soufflé topping:

  • Mix egg yolks with butternut
  • Add salt, pepper, sugar, cinnamon and lemon peel and mix well
  • Place egg whites in a clean glass bowl. Whisk to soft peak stage. 
  • Carefully fold through butternut in two batches. Don’t overmix. 
  • Remove fish from oven and spoon over butternut mixture.
  • Return to oven and bake for 15-20 minutes or until puffed up and golden.
  • Serve immediately
