Method
  • Preheat oven to 200°C.
  • Season chicken.
  • Heat a glug of oil in an ovenproof pan and fry chicken until skin is browned. Set aside. Drain excess fat from pan. Fry onion and brinjal until tender.
  • Add garlic and fry for another minute.
  • Return chicken to pan and add remaining ingredients.
  • Mix, bring to the boil and cover with foil.
  • Bake chicken for 45 minutes, or until tender.
