Method
  • Preheat oven to 180ºC.
  • Halve brinjal lengthways.
  • Scoop out flesh leaving a 1cm-thick ‘shell’. 
  • Roughly chop flesh and brush brinjal shells with 1 tsp (5ml) oil.
  • Heat remaining oil in a non-stick pan and cook onion until soft and sweet.
  • Add garlic and cook for a further 30 seconds. 
  • Add chopped brinjal and baby marrow and stir-fry until cooked through. 
  • Season lightly.
  • Stir chopped basil, tomatoes and balsamic vinegar through cooked vegetables. 
  • Season to taste.
  • Spoon filling into brinjal halves, crumble over feta and bake for 20 minutes.
  • Toss rocket with a little balsamic vinegar and serve with baked brinjals.
