Method

Lamb:

  • Sear lamb in a smoking hot pan until browned on both sides.
  • Add peppers and garlic and fry for 3-4 minutes.
  • Add chilli flakes and ground coriander and pour in vegetable stock and Tabasco.
  • Simmer for 10 minutes.

 

Sweet & sour leeks:

  • Melt butter, add whole leeks and cook for 3-4 minutes or until soft.
  • Add sugar and stir until melted and caramelised.
  • Add red wine vinegar and cook for another minute.
  • Place lamb on a warm plate and serve with sweet & sour leeks.
