Mexican stuffed baby peppers

A hot and spicy dish with plenty of healthy fibre from the brown rice and beans!

Method
  • Preheat oven to 200ºC.
  • Cook rice according to  packet instructions, drain and set aside.
  • Brush peppers with oil. Place in an ovenproof dish, roast for 10 minutes and set aside.
  • Heat a little oil in a saucepan and fry onion until soft. Add mince and brown.
  • Add peri-peri sauce and seasoning. Remove from heat and add rice, kidney beans, cheddar cheese and parsley (or coriander).
  • Spoon mince mixture, then rice into peppers and bake for 10 minutes. 
  • Serve with a squeeze of lemon and an avocado and coriander salad.
