Mexican tomato soup with coriander oil

A great way to use up your over-ripe tomatoes. Tomatoes are a great source of the anti-oxidant lycopene, whih is thought to protect against certain cancers.

Method
  • Place all soup ingredients into a liquidiser and blitz until smooth.
  • Season and leave for 30 minutes for flavours to develop.
  • Strain soup through a sieve to remove bits.


Coriander oil

  • Blitz coriander and olive oil until smooth and strain through a small sieve.
  • Serve soup chilled, topped with avocado and coriander leaves and drizzled with coriander oil.


Good ideas

  • Dare to use soup as a base for ‘wicked’ Bloody Marys.
  • Use a tablespoon or two of tomato purée if you can’t find dried tomatoes.


Cook’s tip

  • Peel tomatoes easily by removing the eye with a sharp knife and cutting a small, shallow cross on top. Plunge into boiling water, then refresh in iced water. Slip skins off.
