Mielie meal wedges with runny egg and rocket

The secret to making stiff mielie meal is patience. Don’t worry if it catches on the bottom of the pan; just enjoy the crunchy layer with lashings of butter as the cook’s treat!

Method
  • Cook mielie meal according to instructions on the packet
  • Spread mielie meal, 2cm thick, onto a greased baking tray and allow to set
  • Slice set mielie meal into 4 equal toast-sized squares
  • Heat a little oil in a non-stickpan and fry squares until golden on both sides
  • Poach eggs in boiling water (with a dash of vinegar) until done to your liking
  • Top pap squares with rocket, ham and egg
  • Season and serve


Cook’s tip

  • To poach eggs without a poaching pan, heat 6cm water in a saucepan with a splash of vinegar. When bubbles appear, swirl water to create a vortex and break egg into the centre. Poach for 2-3 minutes.
