Method
  • Preheat oven to 200˚C.
  • Sift flour and icing sugar together.
  • Use fingertips to rub butter into flour mixture until it resembles fine breadcrumbs.
  • Make a well in the centre and add yolks and half the water.
  • Slowly bring ingredients together to form a soft, but not wet, ball.
  • Add a little extra water if too dry.
  • Turn pastry out onto a lightly floured surface and gently knead until it comes together in a ball.
  • Cover and refrigerate for at least 30 minutes.
  • Roll half the dough out on a lightly floured surface to about ½ cm thick and cut out 12 circles.
  • Place pastry discs into a greased muffin tray and fill each cup with 2 tsp (10ml) fruit mince mixture.
  • Roll out remaining dough and cut out 12 decorative shapes large enough to cover filling in each cup.
  • Brush pie rims with a little water and press decorative lids onto bases. Gently press down to seal.
  • Sprinkle with castor sugar.
  • Bake for 20-25 minutes or until golden and baked through.
  • Dust with icing sugar and serve.
