A delicious and simple way to get a few servings of the 5 recommended servings a day of vegetables and fruit. This soup is also packed with healthy fibre.

Method
  • Heat oil in a large saucepan, sauté leeks and onions until soft. Add garlic and sauté for a further 1 minute.
  • Toss in tomatoes, celery, potatoes, butternut and stock and bring to boil. Reduce heat, cover and simmer for 20 minutes.
  • Add beans, pasta shapes and baby marrows and cook together for 10 minutes
  • Toss in parsley and season
  • Ladle into large bowls, drizzle with olive oil and serve with crusty bread

Cook's tips

  • Add smoked bacon bits to give the soup a delicious smoky flavour
  • Serve topped with ready-made bread croutons
