Place cupcakes on a pretty cake stand, add a few candles, and voilà, a fuss-free birthday cake.

Method

Cupcakes

  • Preheat the oven to 180°C and line mini muffin trays with mini cupcake holders
  • Sift the flour
  • Cream the butter and sugar until fluffy
  • Add eggs one at a time
  • Add dry ingredients. Mix well but don’t over-beat.
  • Spoon dollops of batter into paper cases to fill halfway
  • Bake for 10 minutes or until a toothpick inserted comes out clean. Cool cupcakes on a cooling rack.


Icing

  • Place butter and 2-3 cups icing sugar in a bowl. Beat with an electric beater until smooth.
  • Add the remaining icing sugar gradually, beating well. Add hot water, one tablespoonful at a time.
  • Beat until fluffy and spreadable
  • Divide icing between a few small bowls and colour each with a drop or two of food colouring
  • Allow children to ice the cooled cupcakes and decorate with sprinkles


Cook's tips

  • Cut costs by using margarine instead of butter
  • Use batter to make a 30cm x 20cm sponge for one large birthday cake
