Method
  • Preheat oven to 190°C.
  • Line a 12-cup muffin pan with small foil liners.
  • Whisk eggs, cream and half the parmesan together.
  • Season well.
  • Fill muffin cups with prosciutto, asparagus, parsley and a sprinkling of parmesan.
  • Pour over enough egg mixture to cover filling.
  • Bake for 10-15 minutes or until puffed up and set in the centre.
  • Loosen frittatas from muffin cups and slide onto a platter.
  • Cool slightly before packing into your picnic basket.
  • Serve frittatas with rocket, basil and a drizzle of pesto.
