Method
  • Preheat oven to 180ºC.
  • Toss tomato wedges and garlic on a roasting tray with a glug of oil and vinegar.
  • Roast for 15 minutes.
  • Place roasted tomatoes on a platter. Scatter over remaining ingredients.
  • Drizzle over pan juices and a little more olive oil and vinegar.
  • Season and serve.


Good ideas

  • Stretch this salad even further by adding cooked pasta like penne or fusilli.
  • Blitz leftover salad with a little chilled stock for a quick gazpacho soup.
