Mongolian mince stir-fry

A healthy dish with the variety of colourful vegetables. Inspired by Australian chef Kylie Kwong's recipe, and one of our editor Justine Drake's favourites.

Method
  • Mix all marinade ingredients together in a large bowl.
  • Add beef mince and marinate for 30 minutes.
  • Heat 1 Tbsp oil in a wok or pan.
  • Add half the mince and stir-fry for 2 minutes, breaking up any lumps with a wooden spoon. Remove and set aside.
  • Add remaining oil and fry the second batch of mince for 2 minutes. Return reserved beef to pan.
  • Toss in cabbage, carrots, pepper, salad onions and mushrooms and stir-fry until just tender.
  • Add rice wine, hoisin and oyster sauce, vinegar and sesame oil and cook for a further 30 seconds.
  • Serve with rice or in lettuce leaves with chilli and coriander.


More good ideas

  • Replace the beef  mince with pork  or chicken.
  • Use button or brown mushrooms in place of shiitake.
