Mongolian mince stir-fry

A healthy dish with the variety of colourful vegetables. Inspired by Australian chef Kylie Kwong's recipe, and one of Justine's favourites.

Method

For serving

Cooked brown or jasmine rice, or iceberg lettuce leaves, chopped chilli, coriander and spring onions.

  • Sprinkle cabbage with salt and set aside to wilt while you prepare the other ingredients. Rinse well before using
  • Mix all marinade ingredients together in a large bowl. 
  • Add beef mince and marinate for 30 minutes. 
  • Heat 1 Tbsp oil in a wok or pan. 
  • Add half the mince and stir-fry for 2 minutes, breaking up any lumps with a wooden spoon. Remove and set aside. 
  • Add remaining oil and fry the second batch of mince for 2 minutes. Return reserved beef to pan. 
  • Toss in cabbage, carrots, pepper, salad onions and stir-fry until just tender. 
  • Add rice wine, hoisin and oyster sauce, vinegar and sesame oil and cook for a further 30 seconds. 
  • Serve with rice or in lettuce leaves with chilli and coriander. 

More good ideas

  • Replace the beef mince with pork or chicken, or even ostrich mince. 
  • Use button or brown mushrooms, even shiitake if you want to keep it authentic.
