Method
  • Heat oil in a large saucepan and fry onion until soft.
  • Add garlic and spices and fry for another minute.
  • Add soup mix and chicken and cover with stock.
  • Season and simmer for 1 - 1½ hours, until chicken is tender.
  • Remove chicken and allow to cool slightly before removing flesh and shredding into bite-sized pieces.
  • Return chicken to saucepan, add coriander, and cook to heat through.
  • Serve with fresh bread.
