Method
  • Preheat oven to 190°C
  • Toss vegetable chunks in spices with a good glug of olive oil
  • Season, tip into a roasting pan and cook for 20 minutes
  • Toss with chickpeas and top with sausages
  • Roast for a further 15 minutes or until vegetables and sausages are cooked through
  • Garnish with coriander and serve


More ideas
