Method
  • Mix together the cumin, coriander, chilli, paprika, salt, lemon zest, garlic and olive oil.
  • Toss the chicken into the spice mixture to coat well.
  • Soak four wooden skewers in cold water for about 20 minutes to prevent them from burning.
  • Thread the chicken onto the skewers.
  • Place the kebabs under a hot oven grill, or cook on a smoking hot griddle pan, turning once, until they're done. This will take 8 to 10 minutes
