Moroccan-style couscous with vegetables

This is a meal packed with vegetables. To make it even healthier reduce the amount of oil used. Leftovers make great office lunches.

Method
  • Preheat oven to 200ºC.
  • Toss vegetables, harissa paste, orange juice and peel, oil, garlic and seasoning together in a roasting pan.
  • Roast for 25-30 minutes, or until cooked through.
  • Fry onion, cinnamon, cumin, coriander and chickpeas in a little oil.
  • Add couscous and stock (amount of liquid depends on brand, so read packet instructions for amount and cooking times).
  • Cover and cook until fluffy.
  • Add remaining ingredients and toss together. Serve with pitas, hummus and yoghurt.
