Method
  • Preheat oven to 180ºC.
  • Place vegetables into a roasting pan.
  • Mix remaining ingredients together and toss through vegetables.
  • Roast for 25-30 minutes or until cooked through and slightly caramelised.
  • Serve with a dollop of yoghurt as a side dish, or with couscous as a main.


More good ideas

  • Add a can of drained lentils, chickpeas or butterbeans to bulk it up a bit.
  • Stir through cooked brown basmati rice.
