This dish takes some time to prepare, but it's definitely worth the effort.

Method
  • Heat a glug of oil in a saucepan and fry onion, celery and garlic until soft.
  • Add mince and brown.
  • Toss in cinnamon, oreganum, tomato purée and wine.
  • Gently simmer for 30 minutes.
  • Blanch potatoes in boiling water for a few minutes until just tender, but not breaking up.
  • Heat a large glug of oil in a pan and fry brinjals until soft and well browned all over. Drain on paper towel.
  • Season potatoes and brinjals. Layer brinjals, potatoes, bay leaves and mince in a 30cm ovenproof dish.
  • Preheat oven to 180ºC.


White sauce:

  • Melt butter in a saucepan and add flour.
  • Cook for 1-2 minutes until thick. Gradually add milk, stirring until sauce thickens and bubbles.
  • Season well and pour over top mince layer.
  • Sprinkle with nutmeg and bake for 45-60 minutes or until golden brown.
  • Allow to cool and slightly set before serving.
