Mozzarella stuffed tomatoes

This dish works equally well if made with cocktail-sized cherry tomatoes and pearl bocconcini (tiny mozzarella balls). Tomatoes are a good source of vitamin C and the anti-oxidant lycopene.

Method
  • Preheat oven to 200°C
  • Cut the top off each tomato and set aside. Using a teaspoon, scoop out seeds and core.
  • Spoon a dollop of pesto and a baby mozzarella ball into each tomato
  • Replace tomato ‘lids’, drizzle with oil and season
  • Bake in an ovenproof dish for 15 minutes or until slightly soft
  • Top with balsamic vinegar, rocket and serve with ciabatta
