Method
  • Heat a glug of oil in a pan and sauté onion and leeks until soft. Add garlic and fry for about a minute.
  • Add potatoes, white wine, chicken stock and cream
  • Season and simmer for 20-25 minutes, or until potatoes begin to break up and soup thickens slightly
  • Add lemon juice and peel, mussels, cornflour and dill and simmer for a further 3-4 minutes
  • Serve with fresh crusty bread


More ideas

  • Use chicken or vegetable stock in place of white wine
