Mussels cooked in white beer with cheese bread

White beer is made with a high proportion of wheat. Use lager as an alternative.

Method

Bread:

  • Combine flours, cumin seeds and salt in a large bowl. 
  • Mix in cheese.
  • Stir through buttermilk and shape into a ball.
  • Place dough on a greased baking tray. 
  • Cut a cross into the top with a sharp knife and dust with a little flour.
  • Bake for 25-30 minutes or until a skewer inserted in the centre comes out clean. 
  • Cool slightly.

 

Mussels:

  • Heat butter in a large pot and sauté leek, bacon and garlic until leek softens and bacon crisps up slightly.
  • Add bay leaves, mussels and beer. 
  • Bring to a rapid boil, cover and cook until mussels have opened.
  • Season, toss through parsley and serve with hot bread.
