Method
  • Place flour, yeast, sugar and salt into a large mixing bowl.
  • Add melted butter, egg, milk and vanilla essence and mix to form a soft, pliable dough.
  • Knead dough until smooth, cover with a tea towel and leave to rise in a warm area until doubled in size.
  • Remove from bowl, place dough onto a lightly floured surface and roll out to a 1.5cm thickness.
  • Cut dough into circles and set aside for a few minutes.
  • Heat oil over medium heat and deep-fry dough in batches for about a minute a side.
  • Remove from oil when golden brown and drain on paper towel.
  • Cool slightly. 
  • Roll dough in castor sugar, and using the back of a spoon, make a hole in the side of each doughnut.
  • Place jam into a piping bag and pipe jam into doughnut until hole is full.
  • Serve warm.
