Method
  • Heat a glug of oil in a large pan. 
  • Fry onion until it begins to soften. 
  • Add garlic, baby marrows, aubergines, peppers and oreganum and sauté for a few minutes until almost cooked through.
  • Toss in tomatoes and wine and simmer until liquid has reduced and tomatoes have softened. 
  • Season and set aside.
  • Heat a glug of oil in another pan and fry seasoned fish fillets until just cooked through.
  • Squeeze over a little lemon juice and serve with ratatouille.

More good ideas:

  • Replace the baby aubergines with regular ones.
  • Use ½ cup (125ml) stock instead of wine.
