Ostrich is a very lean protein and, with the addition of beans and vegetables, this dish is a powerhouse of goodness. Cut fat by removing oil and sautéing onion in water.

Method
  • Heat oil and fry onion and garlic paste until glossy
  • Add chilli and mince and fry to brown
  • Add stock, paprika, salt and pepper and tomato paste
  • Bring to the boil, reduce heat and simmer for 30 minutes, or longer if time allows
  • Add a little extra stock if necessary and then keep the meat mixture warm
  • Stir in beans and cook to heat through
  • Remove from heat and adjust seasoning. Heat tortillas in a dry pan until lightly browned and blistered.
  • Place warm tortillas between 2 damp tea towels to keep soft
  • Serve mince and tortillas with lettuce, tomato, onion, avocado and yoghurt


More good ideas

  • Make chilli con carne by adding 2 tsp (10ml) ground coriander, 2 tsp (10ml) ground cumin and a bit of extra chilli. Serve with tortillas.
  • Serve leftover mince in pita pockets for lunch with rocket and tzatziki
  • Use filling as a topping for baked potatoes
